Easy Lemon Butter Cod Recipe
Growing up in Michigan and the surrounding Great Lakes, I have eaten my fair share of fish! After marrying Bruce, my consumption of seafood dwindled a bit, as he’s not as keen on it as I am. However, he will go for a good cooked fish dish & this one hits home. Cod is unique in the fact that it has such a delicate, subtle flavor, and can really take on any ingredient it’s paired with. This recipe has very minimal ingredients, but is packed with bold flavor! You really can’t go wrong with lemon, fresh herbs, and of course, butter! Try pairing this recipe with your favorite side, such as potatoes, rice, or your favorite vegetable! I hope you enjoy!

Ingredients

  • (2-4) Atlantic Cod Filets
  • (2 TBS) Avocado Oil
  • (1 TBS) Sea Salt
  • (1 TBS) Ground Black Pepper
  • (1/4 Cup) Grass-fed Butter
  • (from one lemon) Lemon Juice
  • (2 TBS) Fresh Parsley
  • (2 TBS) Fresh Thyme

Directions

  1. Pat filets completely dry and season liberally on both sides with salt and black pepper. Set aside. 
  2. Combine soften butter and chopped fresh herbs to a small bowl and mix well. Set aside. 
  3. Heat avocado oil in a large non-stick skillet. Add in the filets and cook for 4-5 minutes on each side until opaque and flaky in the center. Transfer to a plate when fully cooked. 
  4. Reduce heat to low and add the butter herb mixture to the skillet. Stir in the lemon juice. Season to taste. 
  5. Pour the lemon butter sauce over the filets and serve!

I absolutely love the warm, summer months. But, I have to admit, cooking in the cooler months is my favorite! There’s just something about having a warm, nourishing, hearty meal waiting for Bruce when he comes in from farming in the frigid temperatures. In a way, it makes me feel like I’m really doing my part in taking care of him, as he provides for our family! This pot roast recipe is 100% no fail and husband approved. It has all of the perfect elements including potatoes, carrots, fresh herbed and spices, a hearty broth, and of course the meat. I used chuck roast as the protein as personal preference, but you could definitely opt for a different cut. Packed with all the autumnal flavors, this recipe is bound to be a family favorite, and all you have to do is throw it in a pot and let time work its magic!
